1 tablespoon olive oil
·
1 onion onion, diced
·
4 cloves garlic, chopped
·
1/2 teaspoon red pepper
flakes
·
1/2 teaspoon fennel
seeds, toasted and ground (optional)

1 (28 ounce) can diced
tomatoes
·
4 cups chicken broth –

1 teaspoon oregano
·
salt and pepper to taste

1 pound shrimp
·
1 cup feta, crumbled
directions
1.
Heat the oil in a large
saucepan over medium-high heat, add the onion and cook unit tender, about 3-5
minutes, before adding the garlic, red pepper flakes and fennel seeds and
cooking for another minute.

Add the tomatoes, broth
and oregano, bring to a boil, reduce the heat and simmer for 5 minutes before
adding the shrimp and feta and simmering until the shrimp is cooked,about 3-5
minutes, before enjoying with crusty bread!
