SALMON WITH AVOCADO SALS

Ingredients
·      2 teaspoon olive oil
·      4 4-ounce salmon fillets
·      salt and pepper to taste
·      1 medium avocado peeled, pitted and finely diced
·      1/2 cup red bell pepper finely diced
·      1 tablespoon red onion finely diced
·      2 tablespoons fresh cilantro leaves chopped
·      the juice of 1 lime
Instructions
1.    Heat the olive oil in a large pan over medium high heat. Season the salmon fillets generously with salt and pepper.
2.    Place the salmon, skin side up, in the pan. Cook for 4-5 minutes on each side or until cooked through.
3.    While the salmon is cooking, prepare the avocado salsa.
4.    In a small bowl, mix together the avocado, red bell pepper, red onion, cilantro and lime juice. Season to taste with salt and pepper and stir gently until combined.
5.    Spoon the avocado salsa over the salmon fillets and serve immediately.
Recipe Notes
1.    I prefer to use fresh salmon fillets in this recipe, but frozen, thawed fillets will also work.
2.    Diced tomatoes can be substituted for the red bell pepper.
