BREAKFAST
BISCUIT CUPS
INGREDIENTS:
- 1/2 bag of Jimmy Dean Sausage Crumbles
- 1 tablespoon vegetable oil
- 1 tablespoon all-purpose flour
- Salt and pepper, to taste
- 1/2 cup milk
- 1/2 cup frozen cubed hash brown potatoes, thawed
- 1 tablespoon butter
- 2 large eggs
- 1/4 teaspoon garlic salt
- 1 TB water
- 1 can (16.3 ounces) large refrigerated flaky biscuits
- 2 tablespoons butter, melted
- 1/2 cup shredded Colby-Monterey Jack cheese
- Muffin Tin
DIRECTIONS:
1.
Preheat oven to 375 degrees.

Add sausage to a skillet with oil. Cook until
warmed up and add flour, pepper and salt. Add 1/2 cup milk and bring to a boil.
Stir until thickened and set aside.

In another skillet cook potatoes and butter
until tender.
4.
In a medium bowl, whisk together eggs, garlic
salt and milk. Add to potatoes and cook until eggs are almost done.
5.
Press biscuits into greased muffin tin. If too
thick, peel off a layer of the biscuit and fit in. Push onto bottom and up
sides. Spread melted butter onto biscuits.
6.
Spoon egg mixture, sausage and cheese into cups.
7.
Bake for 15-18 minutes or until golden. Let cool
for a few minutes and enjoy warm.
