Ingredients
·
600g
of grated peeled sweet potato
·
1
large egg white
·
1
tbs of cornstarch (or arrowroot or tapioca starch) - 1.5 syns
·
1
tsp of paprika
·
"Times New Roman";">
1/4
tsp of salt
·
spray
oil
Instructions
1.
Preheat
oven to 220c or 425f (gas mark 7)
2.
Squeeze
any excess liquid from the grated sweet potato.
3.
Add
to a large bowl.
4.
Whisk
together the egg white, cornstarch, paprika and salt.
5.
Add
to the sweet potato and mix to coat.
6.
Line
a baking tray with parchment paper
7.
Place
egg ring on the tray, spray into the hole with spray oil, add 1/6th of the
mixture and flatten down in the ring, spray over the top with spray oil.
8.
Remove
ring and flatten down even more.
9.
Repeat
5 more times so you have 6 large sweet potato hash browns.
10.
Place
in the oven and bake for 15 mins, then carefully sliding a spatula underneath,
flip the sweet potato hash brown over and cook for another 15-20 mins until
golden on top.
11.
Serve
with your choice of sides for breakfast, lunch or dinner.
