Low Syn Butter Chicken Poutine

This recipe is gluten free, Slimming World and Weight Watchers friendly
·      Extra Easy - 1 HEa and 1.5 syns per serving
·      WW Smart Points - 13

Ingredients

·      600g of floury potatoes (leave skin on) - cook as per my Perfect Syn Free Chips
·      1 serving of leftover Butter Chicken - warmed up
·      100g of mozzarella - roughly broken into chunks - 2 HEa's
·      sea salt
·      fresh coriander

Instructions

1.   Preheat oven to 200c/400f and cook chips as per my Perfect Syn Chips 
2.   Once chips are cooked. 
3.   Divide chips on the tray into two servings, top each serving with some warmed up leftover butter chicken
4.   Scatter each serving with mozzarella (add a pinch of sea salt over the top)
5.   Place back in the oven for a couple of minutes just until the mozzarella starts to melt. 
6.   Then carefully using a spatula, move the poutine to a plate.
7.   Scatter with freshly chopped coriander.
8.   Dig in and enjoy!!
