Snickerdoodles
Ingredients

½ cup butter, softened
·
⅓ cup brown sugar
·
½ cup sugar
·
1 egg
·
1 teaspoon vanilla
·
½ cup cocoa powder
·
1 cup flour
·
¼ teaspoon salt
·
½ teaspoon baking soda
·
¼ teaspoon cream of
tartar
·
½ cup cinnamon sugar
Instructions
1.
In a large bowl or the
bowl of a stand mixer, beat together the butter and sugars until light and fluffy.
Add the egg and vanilla and beat until smooth.

Add the cocoa powder,
flour, salt, baking soda, and cream of tartar, and mix until combined. Chill
the dough in the refrigerator for 30 minutes. Toward the end of the chilling
time, preheat the oven to 300.
3.
Line two baking sheets
with parchment or silicone liners. Roll the dough into 1 inch balls, then roll
each ball in the cinnamon sugar. Place one inch apart on the prepared baking
sheets.
4.
Bake 12-13 minutes, or
until the tops are cracked and the bottoms are just slightly browned. Remove
from oven and let cool for a few minutes before removing to a cooling rack.
