Lime &
Coconut Cake
Ingredients
Cake:
- 175g (6oz) unsalted butter, softened
- 3 large eggs, beaten
- 300g (10½oz) Condensed Milk
- 55g (2oz) desiccated coconut
- finely grated zest and juice 1 lime
- 175g (6oz) self-raising flour
- 1tsp baking powder
- pinch of salt
Icing:
- 90g (3oz) Condensed Milk
- Lime zest and the juice ½ lime
Method
1.
Preheat the oven to 170°C, (150°C for fan
ovens), Gas Mark 3.

Grease and base line a 2lb loaf tin with baking
parchment.

Place all the cake ingredients together in a
large bowl (or food processor) and beat until smooth and pale. Pour into the
loaf tin and cover the top with a strip of baking parchment so that it doesn't
get too brown whilst cooking. Bake for 55-65 minutes until a skewer comes out
clean when inserted into the middle of the cake.

Whilst the cake is cooling, make your glaze. Add
the juice of 1/2 a lime to the condensed milk and mix thoroughly. When the cake
is fully cooled, pipe the glaze on the top. You will need to pipe it as it is
too thick to drizzle! Finally, sprinkle some lime zest on top to garnish.
