Creamy Garlic Pasta

Ingredients:
  • 1 package fettuccine noodles, or noodle of your choice
  • 5 Tbs olive oil or vegan butter
  • 5 Tbs finely diced garlic
  • 2 Tbs all-purpose flour
  • 2 1/2 cups plain, unsweetened non-dairy milk (I used almond)
  • salt (to taste)
  • pepper (to taste)
  • 1 Tbs nutritional yeast
  • 1 tsp dried or fresh parsley


How to Make it:
1.       Bring a large pot of water to a boil and add the noodles.
2.       While the pasta water is coming to a boil, bring a sauce pan to medium-low heat, add the olive oil and garlic and let cook for 1 minute.
3.       Add the flour to the garlic and oil, stirring with a whisk until a paste is formed.
4.       Add vegan milk 1/2 cup at a time to your paste mixture, raising the heat to medium-high and whisking constantly.
5.       You should see a thick sauce consistency, continue adding the milk while whisking and bring sauce to a bubble. (Add 1tsp flour if sauce is not thick enough)
6.       Add salt, parsley and nutritional yeast and stir.
7.       When the pasta is done cooking toss with the sauce and serve.
