Mint Chocolate Chip Truffles

Mint Chocolate Chip Truffles are the perfect treat for mint chocolate
lovers. Easy to make and perfect for St. Patricks Day!
Ingredients
·
8 tablespoons unsalted butter softened at room temperature
·
1 1/2 cups white cake mix
·
1/4 cup white granulated sugar
·
1/2 cup all-purpose flour
·
1/2 tablespoon peppermint extract
·
1/2 cup mini chocolate chips
White
Chocolate Coating:
·
10 oz white chocolate wafers or
chopped white chocolate
·
2 tablespoons green sanding sugar
Instructions
Heat
treat the flour:
1. Preheat
oven to 350F degrees.
2. In
a large bowl mix cake mix and flour.
3. Line
a cookie sheet with parchment paper and spread flour mix in an even layer.
4. Bake
for 5-7 minutes, use a thermometer to check the temperature, it should reach
160F (72C).
5. Remove
from oven and allow it to cool. Remember, we are heating it, not baking, don’t
expect much color change, it should NOT turn golden-brown.
6. Run
it through a sifter to break up any clumps that may have formed while baking.
Truffles:
1. Cover
a cookie sheet with waxed paper and set aside.
2. Add
the flour mix to a large bowl.
3. Slice
butter into small pieces and add to the bowl.
4. Using
a fork, work the butter into the flour and cake mix until fully combined and it
resembles smooth cookie dough.
5.
Mix in peppermint extract and gel food
coloring until fully combined.
6. Mix
in mini chocolate chips.
7. Using
a 1 tablespoon cookie scoop, scoop batter and roll it into a ball.
8. Place
truffle balls onto the prepared baking sheet. Place into the freezer for 10
minutes before coating with white chocolate.
White Chocolate Coating:
1. Add
white chocolate wafers to a microwave safe bowl and melt for 30 seconds. Stir
well and microwave for another 20 or 30 seconds, stir well with a spatula and
if there is still chocolate that did not melt, microwave for another 10-15
seconds and stir well.
2. Using
two forks, dip each ball into the melted white chocolate and place on the
prepared plate, top with sanding sugar immediately.
3. Place
truffles in the fridge for at least 20 – 30 minutes or until the white
chocolate coating hardens.
