Cauliflower Soup

Ingredients

tbsp butter
§ 1
head cauliflower
§ 1
onion, minced
§ 2
potatoes
§ 6
cups vegetable broth
§ 2
shallots, chopped
§ thyme,
to taste
§ basil,
to taste
§ salt,
to taste
§ pepper,
to taste
Instructions
1.
Prepare the vegetables: slice the onion, cut cauliflower into
florets, peel potatoes and cut into cubes.
2.
In a large saucepan, sauté onion in butter 1 minute.
3.
Add cauliflower and potatoes.
4.
Add vegetable broth and spices.
5.
Bring to a boil. Simmer 40 minutes over medium-high heat.
6.
Puree in the blender
