Roasted Broccoli with Meyer Lemon and Garlic

Ingredients
  • 1 pound broccoli crowns, broken into florets
  • 1 Meyer lemon, thinly sliced (about 1/8-inch slices; use a 
href="http://www.amazon.com/gp/product/B001GS7A0S/ref=as_li_ss_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B001GS7A0S&linkCode=as2&tag=ohmyveggies0c-20">mandoline slicer for the best results)
  • 3 cloves garlic, sliced
  • 2 tablespoons olive oil
  • Coarsely ground salt and pepper to taste

  • Instructions
    1. Preheat oven to 400ºF.
    2. Toss all of the ingredients in a bowl. Transfer to a baking sheet that’s been sprayed with additional oil or lined with parchment paper. Roast for 15-20 minutes, stirring after 10 minutes, until the broccoli is tender and just beginning to brown.
