Lightened-Up Guacamole


Lightened-Up Guacamole
Hidden veggies slash the calories (but keep the flavor!) in this creamy lightened-up guacamole.
§  Prep Time: 10 minutes
§  Cook Time: 5 minutes
§  Total Time: 15 minutes
§  Yield: 4 servings
Ingredients
§  2/3 cup frozen peas, thawed
§  1/4 cup cilantro leaves and stems
§  1/4 cup diced pickled jalapeños
§  1 garlic clove,
peeled and smashed
§  3 ripe avocados
§  Juice of 1 lime
§  1 teaspoon herb salt like Herbamare, or regular salt
§  Extra cilantro and pickled jalapeños for garnish
Instructions
1.                   Place the peas, cilantro, pickled jalapeños, and smashed garlic clove into the bowl of a food processor. Pulse a few times, then run steadily until the mixture forms a smooth paste. You may need to stop and scrape the sides a few times.
2.                   Add the lime juice, avocados, and salt. Pulse, stopping to scrape the sides as needed, until the avocados are broken down and the guacamole has reached the desired texture.
3.                   Taste, and adjust seasonings if necessary.
4.                   Scrape the guacamole into a bowl, garnish with cilantro and extra pickled jalapeños.
