CUBAN QUESADILLAS

between two grilled tortillas.

Ingredients

1 pork
tenderloin 3/4 to 1 pound
·
3/4 teaspoon kosher
salt
·
1/2 teaspoon black
pepper
·
1/2 teaspoon garlic
powder

2 teaspoons olive
oil
·
8 flour
tortillas soft taco size
·
6 ounces Boar's
Head SmokeMaster™ Black Forest Ham cut into 1/2 inch thick slices

3 dill
pickles thinly sliced lengthwise
·
4 ounces shredded
swiss cheese
·
4 ounces shredded
mozzarella cheese
·
1/3 cup yellow
mustard
Instructions
1.
Heat
the olive oil in a large pan on medium-high heat. Combine the salt, pepper and
garlic powder and sprinkle over the pork.
2.
Place
the pork in the pan, cook for 8-10 minutes on each side until pork is cooked
through. Thinly slice the pork.
3.
Heat
a grill pan, sandwich press or large skillet. Place 4 tortillas on a flat
surface, top each tortilla with 1/4 cup of the shredded cheeses. Divide the
pork, pickles and ham evenly between the 4 tortillas; sprinkle another 1/4 cup
of cheese over the meats and place the 4 remaining tortillas on top.

Cook
each quesadilla for 3-5 minutes on each side or until golden brown and cheese
has melted. Cut into quarters and serve with mustard on the side. (Oven
directions: Bake at 400 degrees for 8 minutes)
