Mom's Chicken Fried Steak

INGREDIENTS
for the chicken fried steak
3 pound cube steak
1 1/2 cup whole milk
2 large eggs
3 cup flour
1/4 teaspoon cayenne pepper
1 tablespoon black pepper
vegetable oil as needed for frying
salt and pepper to taste
for the gravy
2 cup whole milk
1/3 cup flour
salt and pepper to taste
INSTRUCTIONS
for the chicken fried steak
1.       In one medium-sized bowl, whisk the milk, eggs, salt and pepper
2.       In a different medium-sized bowl, mix the flour, cayenne and black pepper
3.       Dip each piece of cubed steak into the egg mixture and then into the flour mixture. Dip each piece of cubed steak once more into the wet mixture, and again into the dry mixture
4.       Heat oil in a large skillet
5.       Over medium heat, cook breaded meat on each side for 5 minutes or until edges are golden brown
for the gravy
1.       Leave 1/4 cup of the grease remaining in the skillet
2.       Add flour to the same skillet and whisk until smooth over medium heat
3.       Once flour mixture turns golden brown, pour in milk, salt and pepper
4.       Cook for 5 to 10 minutes or until gravy is smooth and thick. Add more milk if your gravy is too thick
5.       wrapping up
6.       Plate the chicken fried steak and generously pour the gravy over top. Season with additional black pepper to your liking
