Syn Free Roasted Cauliflower Frittata | Slimming World

This recipe is gluten-free, vegetarian, Slimming World and Weight Watchers friendly
·      Extra Easy - 1 HEa per serving
·      WW Smart Points - 5 per serving
·      Vegetarian - use a vegetarian cheese
                              
Ingredients
·      1 medium head of cauliflower, broken into small florets
·      1 onion, halved and sliced
·      salt and black pepper
·      pinch of garlic powder
·      pinch of onion powder.
·      cooking oil spray
·      1/2 cup (120ml) of pumpkin puree (can sub with butternut squash puree)
·      1/4 cup (60ml) of fat-free plain Greek Yoghurt
·      6 eggs
·      small pinch of cayenne pepper
·      small pinch of paprika
·      60g of parmesan  (2 HEa's)
·      30g of cheddar (1 HEa)
Instructions
1.   Preheat oven to 200c/400f (gas mark 6)
2.   Add the cauliflower, onion, salt, pepper, a pinch of garlic and onion powder to a large bowl.
3.   Spray with a few sprays of cooking oil spray and toss to coat.
4.   Add to a baking tray lined with parchment paper and spread out in a single layer. 
5.   Roast for 30 mins until lightly golden, remove from oven and allow to cool slightly.
6.   Add the eggs, pumpkin puree, yoghurt, a pinch of cayenne, pinch of paprika and cheddar to a large bowl and mix till well combined.
7.   Spread the roasted cauliflower out in a quiche dish or ovenproof dish.
8.   Pour over the top with the egg mixture.
9.   Sprinkle with the parmesan.
10. Bake for 30 mins at 200c/400f (gas mark 6) for approx 30 mins until lightly golden on top and the eggs cooked and set.
11. Allow to cool for about 10 minutes before slicing.
