Chocolate Crinkle Cookies

Ingredients

·         2 cups sugar

·         ¾ cup cocoa powder

·         ½ cup oil

·         2 teaspoons vanilla

·         4 eggs

·         2 cups flour

·         1 teaspoon salt

·         1 teaspoon cinnamon

·         2 teaspoons baking powder

·         ½ cup powdered sugar

Instructions

1.    In a large bowl, whisk together the sugar, cocoa powder, oil, and vanilla. Add the eggs one at a time, mixing well after each addition.

2.    In a small bowl, whisk together the flour, salt, cinnamon, and baking powder. Add the dry ingredients to the wet ingredients and mix well.

3.    Cover the dough with plastic wrap and freeze 1-2 hours, or until firm.

4.    After the dough has chilled, preheat the oven to 350F and line two baking sheets with parchment or spray with cooking spray.

5.    Scoop the dough into one inch balls and roll in powdered sugar. Place 1½ inches apart on the prepared baking sheets.

6.    Bake 11-12 minutes, or until the cookies are puffed up and cracked. Let cool on baking sheet 5-10 minutes before removing to a cooling rack.
